A few weeks ago I challenged myself to only eat vegetarian meals, and it went really well! I didn’t find myself missing meat at all, or being too hungry. I ate way too much spinach and it made my stomach upset, but other than that it went really well. Below are the recipes I tried and what I thought of them!
Breakfast
I LOVE avocado toast, and I’ve made up my own recipe that I use every time.

What you’ll need:
-1 ripe avocado
-1.5 tsp. garlic powder
-pinch of salt and pepper
-cayenne pepper (optional if you want to make it a bit spicy)
-half a tsp. lemon juice
-1 tsp. paprika
-1 egg
-1 slice of tomato
-toast of your choice
-Feta (optional)
Directions:
- Cut the avocado in half and scoop out the contents. Mash with a fork until a smooth consistency. Add garlic powder, salt and pepper, lemon juice and cayenne pepper. Mix well.
- Heat oil/butter in a small frying pan and add the egg. Cook for 1-2 minutes and then flip. Cook until yolk is to your desired consistency.
- Spread avocado mixture on piece of toast and add sliced tomato and egg.
- Sprinkle egg with paprika and feta. Enjoy!
Berry Spinach Smoothie
What you’ll need:
-1/4 cup black berries
-1 banana
-1/2 cup spinach
-1/4 cup frozen strawberries (or 2-3 whole frozen strawberries, depending on size)
-3/4 to 1 cup almond milk

Directions: Place all ingredients in a blender and blend for 30 seconds or until smooth. Enjoy!

Spinach and mushroom naan pizza

I also added cherry tomatoes and feta to mine! This was on of my favourite recipes. I could only eat one so I had the other one for lunch the next day! 10 out of 10!

Vegetarian Dinner Recipes
These are the recipes I tried for dinner:

I modified this recipe and used brown rice instead of quinoa. I also didn’t use spinach, black beans or corn, as the recipe calls for because that night I wasn’t feeling too well and just wanted something more plain. It was still really good but I added too much cayenne seasoning and it was a bit spicy!

This one I added chicken to because my boyfriend will not eat pasta without meat, but it would have been equally good without the chicken! This one was delicious as well and I highly recommend it.
Those are all of the vegetarian recipes that I tried! I felt really good and energized after eating so clean and healthy and I recommend trying to go vegetarian for a week because I found it to be not as difficult as I thought! If a grandma like me can do it, you can to.
